Red Cabbage Color

Product Description

Red Cabbage Colour is a color obtained from red cabbage leaves. Its principal component is anthocyanin. It is soluble in water and exhibits very bright red to purplish-red shade when used in acidic foods.

Characteristic

  • Red purple powder, soluble in water, aqueous ethanol, propylene glycol, acetic acid, insoluble in oil, ether, absolute acetone
  • Excellent stability to light and heat in acidic conditions.
  • It exhibits a purple red when PH <3.0,pink when PH 4~6 and blue when PH>6. Acceptable pH Range:2.0~4.5
