Red Yeast Rice is a red color obtained through fermentation of grains with monascus purpureus.

Characteristic

  • Red or dark red powder , solution in ethanol and diethyl ether, dissolved in water and glycerinum.
  • Coloring properties are outstanding. In particular, affinity for protein is excellent.
  • Rather stable in heat but unstable in direct sunlight.
  • A food color which is stable for such metal ions as Ca++, MG++, Fe++, and Cu++.

Application

A food additive used for meet food, such as sausage ,dairy product, alcoholic drinks, pastry.It also used for medical and cosmetic dyeing.
